Slow Roasted Rack of Lamb
The Ingredients

- 2 Racks Lamb Ribs
- 3 Lemons (juiced)
- Olive Oil
Rub Ingredients
- 2 tbsp sea salt
- 2 tbsp fresh ground black peppercorns
- 4 tbsp fresh basil (chopped)
- 4 tbsp fresh rosemary (chopped)
- 4 tbsp fresh thyme (chopped)
- 1 tsp cayenne pepper
- 2 tbsp oregano
- 2 tbsp onion powder
- 2 tsp smoked paprika
- 2 tbsp ginger
- 2 tbsp garlic powder
- 2 tbsp seasoning salt
- 2 tbsp mustard powder
- 2 tbsp cumin
- 2 tbsp chili powder
Lamb is healthy and quite tasty when properly prepared. Slow Roasted Rack of Lamb off the Primo is a treat to your taste buds.

Preparation Instructions
- Trim off any excess fat from the ribs. Lightly coat with olive oil on the meat side only. Sprinkle rub heavily and press down on the meat so the rub sticks.
- Place on a tray and cover with clear plastic wrap. Refrigerate 24 hours.
Cooking Instructions
- Set up the grill for indirect cooking and heat to 250°F.
- Place the lamb in the grill for around 2.5 hours.
- Remove, place on a plate and loosely foil for 10 minutes.
- Cut into chops and pour fresh squeezed lemon over them.
